Ouarqa making in the souks of the old medina of Marrakech. This pastry can of course be bought in the supermarket, but when it is made fresh it is lighter and tastier. These young men make it with great panache and style. Lighter than phyllo and brik pastry, ouarqa is first among pastries. Delicious for sweets, as a millefeuille, and also for savoury dishes like b'stila (pastilla) of pigeon or other fillings or the delicious brioattes.
