Traditional Mechoui in Marrakech [01:19]
Mechoui is the great grilled meat of Morocco. Traditionally made in giant pits in the ground that are lined with terracotta, the whole carcass of the animal is splayed and spitted onto a cross and propped up against the wall, whilst a small pot is laid below to catch the drippings (thus preventing fires or off flavours developing) and a charcoal fire is tended with long paddles at a short distance from the meat. In Marrakech, there a few master grill men that preserve this centuries-old tradition.

The famous town square of Marrakech, Jemaa l-Fna, owes little of its fame to its own beauty, but to the continuous day and night life. During most of the days, perfomers of every kind put up their shows, continuing until the food stalls start to move in. From the Jemaa there are several entries to the fantastic suuqs, and for anyone who needs to relax for a while, there are plenty of cafés around the Jemaa, where the main attraction is looking at the ongoing activities. Jemaa el-Fna owes most of its fame to the large number of spectacles going on all around all the time. Snake charmers, singers, story tellers, healers and fakirs attract a dominantly Moroccan audience. The food stalls take over the Jemaa as soon as the orange juice sellers have packed up and gone home. The food is prepares from fresh on the spot, and you can choose between fish, meat or vegetable dishes. The concept is easy, you point at everything you desire, indicate the quantity and within few minutes it is there in front of you. The food is exquisite, tasteful and much appreciated by Moroccans and brave tourists. Never forget the good rule of eating in Morocco: eat where the Moroccans eat — they know where to get good food!

Morocco is a beautiful country .Located in Northwest Africa with Mediterranean and Atlantic coastlines. This country has become one of the major holiday destinations in the Mediterranean, an exotic location with extraordinary natural and cultural wealth. The landscape ranges from lush fields in the middle atlas to desert in the south. Many visitors are lured by the beauty and infinity of the desert, which is vast. Even in the middle of the countryside there is some stunning architecture. The cuisine of Morocco is a mix of Arab, Berber, French, Spanish, and Jewish traditions. if the visitors enjoy delicious spicy food, they will eat different dishes from region to another while traveling. They will smell the odor of saffron, ginger, and cinnamon mixed with dry fruit and meats, chicken, beef, and lamb are all favorites. visitors cannot visit morocco without eating the famous couscous dish.
