Ok , this belongs in the cuisine section but I know that not everybody visits there.

I received the latest consignment of stock from Morocco and my MIL does not do small quantities, so what is the best way to store:

- Baqola (fridge sufficient or can I/should I freeze. If I leave it in the fridge, how long will it last?)

- Salu (not sure if the spelling is correct but its the brown , sweet stuff with nuts in it). Very tasty but there are tons of it. CAN I FREEZE THESE IN SMALL FREEZER BAGS AND DEFROST AS I REQUIRE?

- Shebbakia, I love the stuff but its going to get stale. At the moment its not even in the fridge.

Tips please, especially for the salu! Thanks!

I don't think you can freeze salou... My dad tends to store large amounts of it in air tight containers and put it in the cupboard, and then transfer it to smaller containers/dishes as required.

I think baqola can be frozen, if it's what I think it is. That shouldn't be a problem!

Shabakiya can't be frozen as far as I know...and it going stale is a problem we always have whenever dad brings back huge quantities of it from Morocco! We don't tend to keep it in the fridge either, just on a plate (covered with foil or cling film until you plan on eating it!).

Yeah that helps, thanks my love! So how long does your dad store the salou for?

Baqola is that spianchy stiff with olives and Moroccan spices. I fear that its going to get sticky in the fridge. Sorry but could you ask your dad if it can definitely be frozen?

We've kept salou for quite a while, for months even... it's one of those things that has a good shelf life
Obviously you can't beat fresh salou, but even if it's been stored for a while it still tastes as good. Just mix it up a bit and sprinkle some icing sugar on top when you wanna present it

Is your salou the sticky kind or the crumbly kind? The sticky kind can be be frozen for ages.

Bakola can be frozen for months at a time as can shebakkia. Best to store in small bags to pull out every so often at your pleasure

Aww I wondered why I hadn't heard from you today How come you're not working?? Wish I was at home...lol..

I never knew that there were different types of Salou, I thought it was all crumbly... however I have tasted a similar thing which is so sticky it's almost like a paste?
